This kefir ice cream with banana tastes refreshing, sweet sour and uniquely delicious. You can make it at home using just three ingredients and without an ice cream maker. It is possible to replace bananas with other fruits. You can find a detailed kefir ice cream recipe with the exact quantities and step-by-step instructions below.
Which kefir do I use?
I used homemade milk kefir for the recipe. To make it, I used organic milk with a fat content of 3.8 percent. This also made my kefir ice cream quite creamy.
You can just as easily use kefir from the supermarket. If you want your ice cream to contain fewer calories, opt for a low-fat milk drink.
You can also make this ice cream vegan. Use a plant-based kefir alternative for the recipe, for example soy-based kefir.
Which bananas for kefir ice cream?
Use very ripe bananas for the kefir ice cream recipe, just like for the banana muffins recipe, the chocolate banana bread recipe or the mango coconut dessert recipe. They must already have brown spots or be completely brown.
The sweeter your bananas are, the less additional sweetener you need. In my recipe it is agave syrup.
Green or yellow bananas have a different taste and texture to ripe bananas. They are not suitable for making the ice cream.
Experiment with other fruits
Instead of bananas, you can make the kefir ice cream with other fruits. This makes it colorful and tastes even more fruity.
It is best to use frozen berries. For example, sour cherries, raspberries and strawberries straight from the freezer are very suitable for this. You don’t need to defrost them first.
Sweeten additionally
I sweetened my kefir ice cream with agave syrup, just like the raspberry lemonade or the iced green tea. You can adjust the amount as you wish. If you make the ice cream with other fruits instead of bananas, you may need a little more of the sweetener.
Alternatives to agave syrup are maple syrup and honey. Powdered sugar is also suitable. Of course, you can completely do without an additional sweetener. I do this in my mango sorbet recipe with basil, for example.
