Russian eggs are a popular finger food, snack or cold appetizer. Here I’ll show you how to make them yourself, and how you can modify the recipe for them. The deviled eggs taste hot, spicy and creamy. They are very easy and quick to prepare. What are Russian eggs?
Russian eggs are hard-boiled eggs that are cut in half and filled with a savory filling. They are served cold, for example as an appetizer or as finger food on buffets. Especially at Christmas and New Year’s Eve, the stuffed eggs are a popular party food.
Where does the name “Russian eggs” come from?
Stuffed eggs are common in many countries. Where the name “Russian eggs” comes from is not clear. There are some guesses for it.
After all, many Russian salads contain mayonnaise. Russian eggs are also prepared with it. So the name could come from it. In addition, Russian eggs were often garnished with caviar. The name can also be traced back to this.
Stuffed eggs with mayonnaise or sour cream
The deviled eggs can be made with mayonnaise or sour cream. I have already made them with all of these ingredients. And they taste delicious with both mayonnaise and sour cream.
If you don’t know which you’d rather use, a mixture of them also works for the recipe. By the way, it’s the same with Russian carrot salad or Russian beet salad.
Refine the filling to taste
I seasoned the egg yolk cream for Russian eggs only with garlic, salt and black pepper. You can adjust the amount of garlic to your taste.
You can also experiment with different spices and herbs. For example, mix dill, parsley, basil or spring onions into the egg yolk filling. You can also add some mustard. Or use any spices, such as paprika powder**, to enhance the egg yolk cream.
In general, there are no limits to your imagination when filling Russian eggs. Try different ingredients! Refine the egg yolk cream with chopped vegetables, fried mushrooms, fried onions, hummus, grated cheese and feta cheese.

Ideal as finger food, snack or appetizer
You can comfortably eat the deviled eggs out of your hand. They are therefore perfect as finger food for a party. In addition, you can devour them as a snack if you feel a little hunger in between. Russian eggs can also be served as a cold appetizer.
Bioland or Demeter eggs with raised brother chicks
For less animal suffering, buy organic eggs for the recipe that bear the Bioland or Demeter seal. Also, opt for brands that help raise brother chickens under animal-friendly husbandry conditions. On the website of the German Animal Welfare Association you will find recommendable and not recommendable initiatives “Without killing chicks”.
Even better is to buy eggs from an organic farmer nearby. That way you can first see for yourself how the chickens live on this farm.

Simple stuffed eggs recipe
The Russian eggs recipe is very simple and quick. You can make the finger food even when your guests are already there.
You need to hard boil eggs, which takes about 10 minutes. After that, you cut them in half and briefly scramble the egg yolk cream. Then fill the egg halves with it.
You will also need three main ingredients for the recipe, although you can of course experiment with the filling and add other ingredients.

Stuffed eggs / Russian eggs / Deviled eggs
Ingredients
- 5 eggs
- 3 cloves of garlic
- 50 g mayonnaise or sour cream
- salt**
- black pepper**
Instructions
- Boil eggs hard in water for 8 - 10 minutes and let them cool.
- Peel the boiled eggs and cut them lengthwise into two halves each.
- Take out the egg yolks, put them in a bowl and mash them with a fork.
- Finely crush garlic and add it to the egg yolk mixture.
- Add mayonnaise or sour cream to the egg yolk mixture and mix everything, seasoning it with salt and pepper.
- Pour the yolk mixture into the egg halves with the help of a teaspoon.
- Refrigerate the Russian eggs for about 15 minutes.
