These dried fruit bars taste fruity, juicy and heavenly delicious. They contain no added sugar, are healthy and vegan. You can make the fruit nut bars at home from just three ingredients. 3 ingredient fruit bars recipe

You only need three ingredients to make fruit bars at home. These are dates and other dried fruits, nuts, seeds or flakes and possibly wafer paper. You can experiment with different types of dried fruits and nuts to create different flavors.

You can use various dried fruits for the fruit nut bars recipe. However, they should be soft. For example, soft apricots, soft prunes, soft figs, cranberries, dried cherries and raisins are all suitable. Also try these treats with dried fruit:

In my recipe below, I have made the fruit bars in two flavors. One flavor is with dried apricots. The other variety contains prunes and dried cranberries.

Dates should always be used in addition to other dried fruits. You must not replace them. This is because they make the fruit mixture sticky and thick. This ensures that the fruit nut bars keep their shape very well later on.

How to make dried fruit bars

Nuts, seeds, flakes

I made my dried fruit bars with cashews. Alternatively, you can use almonds and various nuts, such as hazelnuts or peanuts, as in the Soviet shortbread rings, the vegan nut corners or the German plum cake. Sunflower seeds are also suitable.

You can also use rolled oats instead of nuts. The fruit nut bars are also delicious with shredded coconut.

Spices

You can also spice up your homemade fruit bars with various spices, similar to the winter fruit salad or the mandarin jam. Mix some vanilla or cinnamon into the fruit mixture, for example.

With orange or lemon zest, you can give your dried fruit bars a refreshing citrus note, such as the maritozzi, the Burgenland cookies or the mini cakes “Nezhnost”. You can use a little cocoa powder for the chocolate flavor.

Healthy snack for in between

The fruit bars, along with the vegetable chips and apple chips, are perfect as a healthy snack. Snack on them instead of ordinary sweets, such as the Bird’s milk sweets, halva with sunflower seeds or chocolate. You can also take them with you on the go, for example when hiking.

The homemade fruit nut bars are also suitable for children and toddlers, as are the healthy kids’ cake and the baby cookies. You can give them to the little ones to take to school, for example.

How to make fruit bars: tips and tricks

  • You can make fruit bars from various soft dried fruits.

  • If your fruit mixture is mushy, add more nuts or seeds. If it is dry, add more dates or other dried fruits.

  • You will need a rectangular baking tin measuring approx. 25 cm x 20 cm.
  • You can also chill the fruit mixture in the baking tin overnight and make the fruit nut bars the next day.

  • 200 g pitted dates

  • 100 g soft prunes
  • 100 g dried cranberries
  • 200 g pitted dates
  • 200 g cashews
  • 4 edible wafer paper sheets (approx. 120 mm x 200 mm)

Instructions
 

Preparation of the fruit bars with soft apricots

  • Line the rectangular baking tin with cling film.
  • Put cashews in a blender and finely chop them.
  • Add soft apricots and dates and blend to a homogeneous, sticky mixture.
  • Pour the fruit mixture into the baking tin, spread it out evenly, place cling film on top and press the mixture down firmly, for example using a small chopping board.
  • Chill the fruit mixture in the baking tin for at least 2 hours.
  • Remove the cling film and turn out the fruit mixture onto a large chopping board.
  • Place two wafer paper sheets next to each other on the fruit mixture and press them down.
  • Turn the mixture over using another chopping board and press two wafer paper sheets next to each other on the other side of the fruit mass.
  • Cut the fruit mixture into quarters with a sharp knife and then cut each quarter into three fruit bars.

Preparation of the fruit bars with soft prunes

  • Prepare the fruit nut bars in exactly the same way as described above, except use soft prunes and dried cranberries instead of soft apricots.
  • Store the homemade fruit bars in a food storage container in the fridge.
