Creamy ice cream meets crispy wafers for a delicious combination. These wafer ice cream sandwiches can be eaten comfortably out of the hand and are ideal as a summer snack, even at a garden party. There is guaranteed to be something for everyone among the three flavors. You can make the wafer ice cream sandwich at home with just three ingredients. You can find a detailed recipe with the exact quantities and step-by-step instructions below.
Homemade wafer ice cream sandwiches in three flavors
I made the wafer ice cream sandwiches in three different flavors. One is the regular cream ice cream, which you can also use for the Soviet milkshake recipe, one is the caramel ice cream and one is the chocolate ice cream.
Caramelized sweetened condensed milk is used for the caramel ice cream, just like in my nut caramel chocolate dessert cups recipe. The chocolate-flavored ice cream is made with cocoa powder, just like the chocolate processed cheese spread.
More ideas for refining
You can experiment with this wafer ice cream sandwich recipe to your heart’s content, similar to the kefir ice cream recipe. Simply create your favorite ice cream between the wafers.
For example, you can mix a fruit puree, jam or fruit powders into the ice cream mixture. Add pieces of nuts for a crunchy touch. Chocolate drops make it even more chocolatey.
The mint ice cream and the lemon ice cream, which are made from the same basic ingredients, also work well between the wafers.
Buying tort wafers
Russian stores and some large German supermarkets stock tort wafers or plain wafers. You can also order them online.
I used rectangular wafer sheets, just like for the no-bake wafer cake. Alternatively, you can also use round sheets and then cut the large ice cream sandwich into smaller pieces of any shape.
Suitable tin for freezing
If you don’t have a tin that fits the size of the tort wafer sheets, you can carefully cut the sheets into any rectangular casserole or baking tin. If you are using round sheets, a springform tin is best for freezing the ice cream mixture.
Optionally, you can make a container out of thick aluminum foil for rectangular wafer sheets, which I also use in the video. To do this, place two pieces of aluminum foil that are about 15 cm longer than the wafer sheets crosswise on top of each other. Place a wafer sheet in the middle, pull up the ends of the aluminum foil from all sides and press them firmly together at the corners.

- 480 g caramelized sweetened condensed milk cold
- 2 rectangular tort wafer sheets (plain wafer sheets) (in my case approx. 10.5 inch x 10.5 inch)
for the wafer chocolate ice cream sandwich
- 800 g cream cold
- 480 g sweetened condensed milk cold
- 30 g cocoa powder
- 2 rectangular tort wafer sheets (plain wafer sheets) (in my case approx. 10.5 inch x 10.5 inch)
Instructions
Preparation of the classic wafer ice cream sandwich
- Line a suitable rectangular baking tin or casserole dish with baking paper and place one of the two tort wafer sheets in it. Put the second sheet to one side for now.
- Place cream and sweetened condensed milk in a mixing bowl and whip until creamy.
- Pour the cream mixture onto the wafer sheet in the tin, spread it evenly over the entire sheet and smooth it out.
- Place the second wafer sheet on top of the cream mixture and press down lightly.
- Place the tin with the ice cream in the freezer for approx. 5 - 8 hours until it sets.
- Remove the large wafer ice cream sandwich from the tin using the baking paper and quickly cut it into several small pieces (12 pieces in my case).
- Place the wafer ice cream sandwiches in the freezer until ready to eat.

- Line a suitable rectangular baking tin or casserole dish with baking paper and place one of the two tort wafer sheets in it. Put the second sheet to one side for now.
- Place cream and sweetened condensed milk in a mixing bowl and whip until creamy.
- Add cocoa powder and beat briefly to form a homogeneous chocolate mixture.
- Pour the chocolate cream mixture onto the wafer sheet in the tin, spread it evenly over the entire sheet and smooth it out.
- Place the second wafer sheet on top of the chocolate cream mixture and press down lightly.
- Place the tin with the ice cream in the freezer for approx. 5 - 8 hours until it sets.
- Remove the large wafer chocolate ice cream sandwich from the tin using the baking paper and quickly cut it into several small pieces (12 pieces in my case).
- Place the wafer chocolate ice cream sandwiches in the freezer until ready to eat.
