These tofu pancakes are juicy, fluffy and so delicious. They are a vegan version of the popular Russian, Ukrainian and Belarusian syrniki or tvoroshniki. You can make them quickly and easily with just a few purely plant-based ingredients. You can find a detailed vegan syrniki recipe with the exact quantities and step-by-step instructions below.
Sugar free vegan syrniki
My vegan syrniki contain no industrial sugar, just like my fruit bars. A banana is used as the sweetener here. It must be very ripe or overripe for the recipe, similar to the vegan mango coconut dessert cups or the vegan banana muffins with chocolate chips.
Select ingredients
Tofu
Natural tofu has an almost neutral taste and is ideal as a substitute for tvorog. You need good quality firm tofu for the vegan syrniki, as well as for vegan tofu scramble, vegan tofu fish or vegan fish cakes. It should taste juicy and mild.
Banana
I used banana as a sweetener. This gives the tofu pancakes a slightly fruity note. It is also a good egg substitute.
What is important is that you use a very ripe or overripe banana. It must have brown spots or be completely brown.
You can use sugar or powdered sugar instead of banana. For the recipe below, around 40 – 50 grams is enough. You may then need to adjust the amount of flour.
Soy yogurt
Soy yogurt gives the vegan syrniki a slightly creamy consistency and more flavor. You can also use another plant-based yogurt alternative, just like for the mushroom stroganoff.
Rice flour
Rice flour, which my Scottish shortbread also contains, serves as a binding agent in the tofu pancakes. It absorbs liquid well, so you only need a little of it. And the less flour you use, the more delicious the vegan syrniki taste.
Alternatively, you can use coconut flour or corn flour instead of rice flour. Please note that the amount may then be different.
Baking powder
A small amount of baking powder makes the tofu pancakes a little looser and fluffier. However, you can also leave it out.
Vanilla
For more flavor and aroma, I have refined the vegan syrniki with ground vanilla bean. Vanilla sugar or vanilla extract can be used instead.
Coconut oil
The best way to make the vegan syrniki is to fry them in coconut oil. This gives them a delicate flavor and they don’t absorb as much fat.
However, you can of course use a heatable vegetable oil for the recipe. It should be neutral in taste.
How to serve vegan syrniki?
The vegan syrniki are perfect for breakfast, alongside the vegan blini, the tropical fruit salad or the vegan jam oatmeal bars. But you can also serve them for dessert after a meal. The tofu pancakes are also a great snack between meals.
You can serve the vegan syrniki with the cashew sour cream, soy yogurt or maple syrup. They taste delicious with a jam, for example with the apricot jam, blackberry jam or cherry plum jam. You can also enjoy them sprinkled with a little powdered sugar or with fresh fruits.

How to make vegan syrniki: tips and tricks
- Only use ripe or overripe bananas for the tofu pancakes.
- Squeeze the tofu a little and pat it dry thoroughly to remove the excess liquid. This way you won’t need as much flour.
- The amount of rice flour specified in the recipe may vary. If your tofu mixture is too mushy, add a little more flour. However, remember that the less flour you use, the tastier the vegan syrniki will turn out.
- You can add some raisins to the tofu mixture.

Vegan syrniki
Ingredients
- 200 g natural tofu
- 1 very ripe banana
- 50 g soy yoghurt
- approx. 50 g rice flour
- 1/4 tsp baking powder
- 1 pinch of ground vanilla bean
- 2 tbsp coconut oil for frying
Instructions
- Pat natural tofu dry, cut it into large pieces and squeeze each piece of tofu a little with a straining cloth or tea towel to remove the excess liquid.
- Finely chop the tofu with your hands and place it in a mixing bowl.
- Mash peeled banana with a fork and add it to the tofu.
- Add soy yoghurt and vanilla and mix.
- Add baking powder and rice flour and mix to a homogeneous, soft, malleable mass.
- Form small flattened patties from the tofu mixture.
- Place coconut oil in a large pan and melt over a medium heat.
- Fry the vegan syrniki in the pan over a medium heat until golden yellow to golden brown on both sides.
Notes
